The White golden Truffle

Tuber Magnatum Pico

It populates the tables of the best restaurants in the world and is the most prized food on the table. It was considered a “magical fruit”, and in the modern cuisine the “gold mushroom” for its price. The White Truffle of the San Miniato Hillside grows in a limited area favored by particular – and almost mysterious – combination of forest fauna and geological substratum.

For a long time it could only be marketed under the name of white truffle of Alba or Acqualagna. With the Law n. 752 (1985) it was established that the Tuber Magnatum Pico had to be traded only under its Latin name, with the geographical area of โ€‹โ€‹collection next to it. Thus, the Tuscany Region established the following production areas for the Tuscan white truffle: the San Miniato hills, the Crete Senesi, the Casentino, the Mugello and the Val Tiberina. Of these favorite areas of white truffles, San Miniato represents a geographical area with high production extending towards its internal countryside. The tradition and activity of truffle harvesting has been organized for just over 100 years through family groups in the area, the so-called truffle hunters. More than seekers, entire families, each with its secrets handed down for generations, their own truffle dogs and hidden paths in the woods.
